Pico de Gallo

Pico de Gallo with a refreshing twist!

Ingredients
  

  • 1/2 Cup white onion chopped
  • 1 1/2 Cup tomato deseeded and chopped
  • 1 Cup cucumber deseeded and chopped
  • 1/4 Cup jalapeno deseeded and chopped
  • 3/4 Cup cilantro chopped
  • 1/4 Cup white vinegar
  • 1/4 Cup lime juice
  • 1/4 Cup olive oil optional
  • 1 tsp salt
  • 1/2 tsp ground pepper

Method
 

  1. Chop all veggies and add to a quart size jar. Add wet ingredients and salt and pepper. Mix and store in fridge for and hour to meld together. Will keep for up to a week in fridge. 
  2. Serve with tortilla chips or over tacos. Can be used in any place as substitute for salsa.
